Plans for Friday Night
Mar. 17th, 2006 06:05 pm1. Gorge self on broccoli-less Chicken Broccoli Casserole--check.
It's my mom's recipe, and it involves riceroni and sharp cheddar, and then you put this sauce on top that is a can of cream of chicken soup and then 1/2 cup mayo and a few dashes of lemon, and i know it sounds bad, hell it LOOKS bad too, but then you bake it for 40 minutes and suddenly it is THE BEST THING EVAR.
and then you put it in the fridge for a day or two and it KILLS YOU WITH GOOD. MMMM.
2. Watch X-files until something freaks me out too much to sleep--on it.
Last weekend it was "Blood". KILL. DO IT NOW.
3. Knit a gauge swatch so I can start my cardigan--up next.
I am such a dweeb, being totally ecstatic to start knitting a cardigan. Seriously. My mentor teacher has one she knitted that I was totally jealous of, but you know she's a 60-something Latin teacher, so it kind of makes a lot more sense when she is like "LOOKIT MY COOL CARDIGAN PATTERN".
We are so totally the same person, it's ridiculous. a few weeks ago i told her i couldn't make rice, just can't, and she was like "OMG ME TOO!" and she thought it was so funny that she actually bought me a microwave rice cooker for an early birthday present.
4. Sleep until roughly the second coming--oh hell yes.
Or until the postman arrives with my cds tomorrow morning, pleasepleaseplease.

Date: 2006-03-17 11:19 pm (UTC)Yay cardigan! I really must learn to make something that isn't square. I picked up 21 double ended needles at a thrift store for $2 yesterday, so hurray! Most of them don't match, but there's probably three sets of four in there.

4-6 chicken breasts
1 box chicken riceroni
1 cup grated sharp cheddar
1 package frozen broccoli
crackers or italian breadcrumbs
for topping:
2 cans of cream of chicken condensed
1 cup mayo
2 teaspoons lemon
1. de-skin and cook chicken in water, use water to cook riceroni, cook broccoli.
2. layer riceroni, then broccoli, then chicken, then sprinkle with cheese.
3. Mix topping and pour over the other stuff. Crumble crackers or italian breadcrumbs over top.
4. bake for 40 minutes at 350 degrees.
I about halved the recipe for a 9x9 dish and baked for about 35 minutes. You can make this ahead of time by putting everything together except the topping and then setting in the fridge overnight. You'll have to bake it a bit longer if it's cold. the topping benefits from sitting in the fridge for a while too, so I usually make that the night before as well, but just don't put it actually on the casserole until i am just about to bake it.

Date: 2006-03-17 11:56 pm (UTC)it was years and years before I knew that it was just mayo and cream of chicken, and that still grosses me out a little, but it's SO GOOD after sitting in the fridge for a while, it wouldn't matter what it was made out of.
